Our Delicious Lentil Stew with a touch of Middle East (The instructions are in the video below)
Ingredients (3-4 people):
- 1 cup of lentils (We used organic brown. Soaked, washed and rinsed)
- 900 ml cold water (to cook the lentils)
- 1 tablespoon extra virgin olive oil
- 1 big red onion (diced)
- 4 cloves of garlic (chopped)
- 1 teaspoon ground cumin
- 1 teaspoon crushed dried cilantro leaves
- 1 teaspoon kosher salt
- 1 tablespoon tomato paste
- 2 chopped tomatoes
- 100 ml hot water
- 1 tablespoon of unsalted butter
- 1 tablespoon of fresh chopped parsley (some for the stew and some for garnish)
